Sprout and Kale Salad

Try this delicious sprout and kale salad with a lemon and cumin dressing. This recipe is full of protein-rich sprouts and a dressing that will break you out of that balsamic vinegar rut!


I made this salad one lazy Sunday afternoon and it turned out so good that I ended up making a whole lot extra for lunch that week. What makes this salad a winner is not just the refreshing taste with a touch of lemon and spice, but also the nutritious ingredients. Kale sits on top of the food chain when it comes to nutrient density. It is super high in Vitamin K, A, C, Folate and Calcium. Sprouts are incredibly high in protein and are easy to digest as they are rich in enzymes (check out other benefits of sprouts here).

Cumin is high in Iron (yay for non-caffeinated energy!) and Manganese (enzyme activation and bone health). Cumin also helps release pancreatic enzymes and support nutrient absorption.

Servings: 2

Salad:

2-3 cups of chopped kale leaves
3/4 cup grape tomatoes, halved
1/4 cup fine chopped orange (or any sweet pepper)
1/2 cup sprouts (check out All About Sprouts to get instructions for making your own sprouts at home)

Dressing:

1 freshly squeezed lemon
2 tsp olive oil
1 tsp cumin
Pinch of Himalayan salt and freshly ground pepper
Pinch of cayenne pepper (if you like a little spice)

Mix all the dressing ingredients together with a whisk/fork. Combine vegetables and sprouts in a salad bowl, pour dressing over the ingredients and enjoy!
